Head chef Kurstin Berriman showcases the best of the Coal River Valley in a style that is generous yet refined. The onsite garden and orchard provide a bounty of produce that is featured daily, and the convict built cellar is home to award winning Tasmanian wines.

Dinner Dining

The dining room at Prospect is open to staying and non-staying guests Wednesday-Sunday, offering a 5-course set degustation menu. Seating in off-peak season (Apr-Oct) is at 6.15pm and during peak (Nov-Mar) at 6.45pm.

A lighter style menu is provided for staying guests Monday and Tuesday. Pre-orders required.

Breakfast is served in the conservatory kitchen daily for inhouse guests and is included in all rates and packages.

We are open to non-staying guests for breakfast on Saturday and Sunday for bookings between 8am and 10am.
