Head chef Kurstin Berriman showcases the best of the Coal River Valley in a style that is generous yet refined. The onsite garden and orchard provide a bounty of produce that is featured daily, and the convict-built cellar is home to award-winning Tasmanian wines.

Restaurant Dining

The dining room at Prospect is open to staying and non-staying guests for dinner 7-nights a week, offering a 5-course set degustation menu. Seating in off-peak season (Apr-Oct) is at 6.15pm and during peak (Nov-Mar) at 6.45pm.

Lunch is available Friday to Sunday 12pm to 3pm. Enjoy a 3-course set menu. Last bookings are accepted at 2pm for a 3pm finish.

Breakfast is served in the conservatory kitchen daily for inhouse guests and is included in all rates.

We are open to non-staying guests for breakfast on Saturday and Sunday for bookings between 8am and 10am.
